Pumpkin Oatmeal Breakfast Cookies


I love fall! It means I can bake with cinnamon and pumpkin purée and drink hot apple cider.  I decided to make a cookie that would be a good snack or even a quick breakfast last night and I must say these turned out pretty darn good! This recipe is gluten, dairy, egg, soy, and wheat free.  Feel free to substitute chocolate chips for dried fruit and the almonds for another nut you like or leave it out all together. 

3 Cups gluten free rolled oats
1 can puréed pumpkin (not pumpkin pie filling)
1/3 cup chia seeds
1/3 cup whole flax seeds
1/2 cup chopped raw almonds
1/3 cup enjoy life semi sweet chocolate chips
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup sweetener of choice (honey, coconut nectar, maple syrup, or org. Cane sugar)

Mix together use hands to form into patties and bake at 350 degrees for ~15 min or until slightly brown around edges.

Superfood Breakfast


Lately I have been obsessed with eating what I would call a superfood breakfast. It's so easy to make I don't know why I didn't think of it earlier.  What I love about this recipe (and don't worry I will share it with all of you!) is that you can customize it with whatever you have.  For example my Young Living Ningxia Wolfberries came in the mail yesterday so I can now add them in this breakfast and it's going to be yummy.  Ningxia wolfberries are powerful antioxidants and provide an array of nutrients and protein as one of nature's most nutritious fruits. Slightly tart in flavor, add Young Living's whole dried Ningixa wolfberries to baked goods, cereal, salad, trail mix and more.  These will definitely be on my order again.   Anywho... let's get to the recipe shall we?


Ingredients
1/2 Cup Cooked Quinoa
1 Tbsp Almonds
1 Tbsp Dried Currents
1 Tbsp Vanilla Extract (Optional)
1 Tbsp Hemp Hearts
1 Tbsp Chia Seeds
~ 1/4 to 1/3 Cup Nut Milk (I used Flax Milk)

Add everything to your bowl and give it a good stir.  Let sit for a minute or two and then you are ready to eat.  Feel free to substitute or change any of the ingredients to your taste.  Enjoy!

Eat: Pancake Breakfast

I was given a free sample of Pamela's Gluten Free Pancake Mix to try out.  I wanted to jazz up my pancakes because, well jazzed up pancakes are awesome, that's why.  :) Anyways I remember seeing on Pinterest someone making bacon pancakes and so that's what I decided to make.

I started by cooking up some Applegate Sunday Bacon until crispy.
I allowed it to sit on a paper towel to get rid of any excess grease.
I then mixed up the pancake mix according to the directions.
I placed the cooked bacon in the pan and covered each one with the pancake mix
It turned out delicious!  I'll have to remember to do this again some day.  The Pamela's mix was pretty good too.  It's very easy to mix up and the pancakes rose nicely.  I would definitely think about getting that mix in the future too.
